YUM | Delicious Low Cal Gluten Free Pizza
2March 7, 2014 by Erin C
I know you don’t believe me but a picture speaks a thousand words. Check out this delectable beauty I cranked out for dinner tonight:
Soooo delish and super easy to throw together for a few dimes.
Do they make ready made frozen GF pizzas?
Yup. But they cost about $10 a piece and taste terrible. Sorry gluten free industry but pizza needs to be higher on your list!
You’ll see below too that I use a GF Tortilla instead of other GF pizza crusts. That’s for 2 reasons:
1. They are about 1/2 the calories
2. They taste WAY more authentic than other GF crusts.

Kraft shredded pizza cheese, Dole baby spinach, Food for Life Brown Rice Tortillas, Ziggy’s Pepperoni (but Pillars makes an official GF version) and Primo pizza sauce
The Recipie:
1 Gluten Free Tortilla (it cooks up light and crispy) – 130 cal
1/4 cup Pizza Sauce – 45 cal
1/3 cup shredded Pizza Mozzarella – 90 cals
1/2 cup chopped Fresh Spinach – 5 cal
15 Gluten Free Pillar Pepperoni Slices – 97 Cal
= 367 cal (and you can eat the whole thing!)
Throw together in the order you like. I like to put sauce first, 1/2 the cheese, then spinach then the pepperoni. Then I top it off with the rest of the cheese.
Cook directly on the rack at 425F for 20 minutes and you are golden (so is the pizza probably)
Nom Nom Nom
Eat well. Enjoy life. Have a great night!
